SMART SHOPPING: Buying Oxtails


Depending on which part of the tail they come from, oxtail pieces can vary in diameter from ¾ inch to 4 inches. (Thicker pieces are cut close to the body; thinner pieces come from the end of the tail.) Try to buy oxtail packages with pieces approximately 2 inches thick and between 2 and 4 inches in diameter; they will yield more meat for the soup. Thicker pieces also lend more flavor to the broth. It’s fine to use a few small pieces; just don’t rely on them exclusively. Oxtails are often found in the freezer section of the grocery store; if using frozen oxtails, be sure to thaw them completely before using.
