ON THE SIDE: Foolproof Green Salad


Whisk 1 tablespoon vinegar (red wine, white wine, or champagne), 1½ teaspoons minced shallot, ½ teaspoon mayonnaise, ½ teaspoon Dijon mustard, ⅛ teaspoon salt, and pinch pepper together in small bowl until mixture is smooth and looks milky. Very slowly drizzle in 3 tablespoons extra-virgin olive oil while whisking constantly until emulsified. Toss with 10 cups lightly packed greens. Serves 4 to 6.
