Hominy is made from dried corn kernels that have been soaked (or cooked) in an alkaline solution (commonly lime water or calcium hydroxide) to remove the germ and hull. It has a slightly chewy texture and toasted corn flavor and is widely used in soups, stews, and chilis throughout southern North America and Central and South America. Given its sturdy texture, hominy can easily withstand hours of simmering and is perfectly suited for the slow cooker. It is sold both dried and canned; however, we prefer the convenience of canned hominy, which requires only a quick rinse before using.
