ON THE SIDE: Cilantro Rice


Process 3 cups chicken broth and 1½ cups fresh cilantro leaves in blender or food processor until mostly smooth, about 15 seconds. Bring cilantro mixture, 1½ cups long-grain white rice, and 1 teaspoon salt to boil over medium-high heat in large saucepan and cook until no liquid is visible, 5 to 8 minutes. Cover and continue to cook over low heat until rice is tender, about 15 minutes. Serves 4.
