SMART SHOPPING: Blade-Cut Pork Chops


Pork chops come from the loin of the pig and can be cut into blade chops, rib chops, center-cut chops, and sirloin chops. Cut from the shoulder end of the loin, blade chops are the toughest cut–but they are also the fattiest, juiciest, and most flavorful. We put the slow cooker to work to gently cook these chops until they are tender. Look for bone-in chops with plenty of dark meat and good marbling.
