SMART SHOPPING: Enchilada Sauce


Here in the test kitchen we all agree that nothing beats fresh, homemade enchilada sauce, but we have found that canned sauce works well when time is short. We use both the red and green varieties. Both are thin and mostly smooth in consistency. While the red sauce, made from red chiles, is the more traditional choice, you will also see a green sauce (sometimes labeled “chile verde”) made from green chiles. Enchilada sauces are available in both mild and hot varieties, so choose the heat level to suit your taste. Do not substitute thinner taco sauce for enchilada sauce.
