ON THE SIDE: Garlic bread


Toast 10 unpeeled garlic cloves in small skillet over medium heat, shaking pan occasionally, until fragrant, about 8 minutes. Let garlic cool, then peel and mince. Using fork, mash garlic in bowl with 2 tablespoons unsalted butter, 2 tablespoons grated Parmesan cheese, and ½ teaspoon salt. Cut 1 (10-inch) loaf of Italian bread in half lengthwise, spread both pieces with butter mixture, then season with salt and pepper. Lay bread, buttered side up, on baking sheet. Bake in 500-degree oven until surface of bread is golden brown and toasted, 8 to 10 minutes. Slice and serve warm. Serves 4 to 6. (This recipe can be doubled.)
