Here in the test kitchen, we prefer oil-packed sun-dried tomatoes to their leatherlike counterparts. Because the packing oil can impart a musty, herbal flavor to the tomatoes, we recommend rinsing them before using them in any recipe. We’ve found that washing away excess herbs and spices improves their taste.
