QUICK PREP TIP: Small-batch pesto
Process 4 cups fresh basil leaves, ⅔ cup extra-virgin olive oil, 3 tablespoons toasted pine nuts, and 1 minced garlic clove in food processor until smooth, 30 to 60 seconds, scraping down sides of bowl as needed. Transfer pesto to bowl, stir in ½ cup grated Parmesan cheese, and season with salt and pepper to taste. Makes about 1 cup.
