Escarole is a leafy green that looks much like green leaf lettuce. Its bitter flavor makes it a great choice for salads. But unlike lettuce, escarole stands up well to cooking, which makes it a great addition to this simple pasta sauce. Make sure to slice the escarole before washing it well. Use a salad spinner to wash it, as the fine, feathery leaves tend to hold a lot of soil.
