QUICK PREP TIP: Storing Mushrooms
Curious as to the best way to store mushrooms once you get them home from the market, we pitted several storing methods against each other over a five-day period to see what worked and what didn’t. Among the things we tried were leaving them in their original box and covering them with plastic wrap or a damp paper towel, wrapping them in aluminum foil, storing them in a paper bag, storing them in a paper bag cut with air holes, storing them in an airtight zipper-lock bag, and simply leaving them uncovered. The winning method turned out to be either the original packaging (if purchased in a tray wrapped in plastic), or a simple paper bag (if purchased loose). The other methods were flat-out losers and turned the mushrooms either slimy or dried out in just a couple of days.
