ON THE SIDE: Scallion-Cheddar Muffins


Whisk 3 cups all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and ⅛ teaspoon pepper together in large bowl. Stir in 1 cup shredded cheddar cheese and 2 thinly sliced scallions. In separate bowl, whisk together 1¼ cups whole milk, ¾ cup sour cream, 3 tablespoons melted unsalted butter, and 1 lightly beaten large egg. Gently fold milk mixture into flour mixture (batter will be very thick). Portion batter into greased 12-cup muffin tin and sprinkle with ½ cup grated Parmesan cheese. Bake in 350-degree oven until golden brown, 25 to 30 minutes. Let cool for 15 minutes before serving. Makes 12.
