The chicken tenderloin is the piece of meat located on the inside of the breast, closest to the bone. The tenderloin is weakly attached to the breast and is easy to remove with a simple tug. Tenderloins come prepackaged in the meat section of most supermarkets, but if you have trouble finding them, it’s simple to create a quick substitute. Just trim an equal amount of boneless, skinless chicken breasts and cut them crosswise into ½-inch-thick slices.
