SMART SHOPPING: Yellow Versus White Onions
In our recipes, unless otherwise specified, we always use yellow onions, the kind that come in 5-pound bags at the supermarket. But wondering if there was any difference between these onions and white onions (color aside, of course), we decided to hold a blind taste test to find out. We tried them raw in pico de gallo, cooked in a simple tomato sauce, and caramelized. More than half a dozen tasters could not tell the difference between the two types; the others tasted only minor variations in sweetness and pungency. Our conclusion? Since we go through onions quickly, we find it easiest to buy a big bag of yellow onions, but you can use white and yellow onions interchangeably in any recipe calling for “onions.”
