QUICK PREP TIP: Storing Cheese
Storing cheese presents a conundrum: As it sits, it releases moisture. If this moisture evaporates too quickly, the cheese dries out. But if the moisture is trapped on the cheeseās surface, it encourages mold. Specialty cheese paper prevents this problem with a two-ply construction that lets cheese breathe without drying out, but it usually requires mail-ordering. For a more accessible method, we found that wrapping our cheese with waxed or parchment paper, then loosely wrapping around the parchment with aluminum foil, did the trick. Both papers wick moisture away, and the foil traps just enough water to keep the cheese from drying out.
