Goat cheese boasts an assertive, tangy flavor and a creamy yet crumbly texture that works well in many dishes, from salads and appetizers to pastas and pizza. To find the best one, we tasted nine brands plain and baked, rating them on flavor, texture, and tanginess. Our favorite goat cheese is Laura Chenel’s Chèvre Fresh Chèvre Log, which tasters found to be “rich-tasting” with a “grassy” and “tangy” finish. It was “smooth” and “creamy” both unheated and baked, and it kept its “lemony, bright flavor.”
