ポンズ
Ponzu Sauce
The name of this popular dressing derives from the Dutch ponsen (citrus punch) and Japanese su (vinegar), and so the name loosely means “citrus punch vinegar.”
MAKES ABOUT 250 ML (9 FL OZ/1 CUP)
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon rice vinegar
60 ml (2 fl oz/¼ cup) Japanese soy sauce
1 tablespoon mirin
60 ml (2 fl oz/¼ cup) sake
1 teaspoon sugar
4 cm (1½ in) square piece of konbu, wiped with a damp cloth and cut into strips
1 tablespoon katsuobushi (bonito flakes)
Place all ingredients in a non-metallic bowl and stir until the sugar is dissolved. Cover with plastic wrap and refrigerate for 24 hours. Strain through muslin or a fine sieve before using.
