Conventional centrifugal juicers use high speed and friction to grind the juices out of fresh produce. This heats the juice, destroying some vital enzymes that aid optimum digestion of its other nutrients. By contrast, cold-pressing preserves these health-giving enzymes by using a low-speed pressing motion to squeeze the juice out of fruits and vegetables, so their nutrients are more easily assimilated by the body.
There is no need to peel thin-skinned produce such as apples, carrots, ginger and turmeric if they are organic (just wash them well first), but I would peel conventionally grown produce.
The drinks in this chapter will keep for up to 72 hours in a sealed glass jar in the fridge, but for maximum nutrition and vitality are best enjoyed straightaway. Remember to ‘chew’ your juices, shots and smoothies, to obtain the most nutrients from them.
