GS! EGG SANDWICH
A pre-workout powerhouse!
SERVES 1
1 sprouted whole grain muffin or 2 slices toast
1 egg or 2 egg whites
2 slices turkey bacon
1 slice Swiss cheese or low fat cheddar
2 slices tomato
2 slices red onion
Handful of spinach, wilted
Sea salt
Black pepper
Sunflower sprouts (optional)
TIP: Wilting spinach – lightly spray a pan with cooking spray and set on medium heat, toss a handful of spinach into the pan and add 1 tbsp. water, cook for a few minutes until spinach wilts
Method
Split muffin in half and lightly toast in toaster. If you don’t have a toaster place muffin cut side down in pan once warm and press to toast, should be a couple minutes for each muffin side
Spray a pan with cooking spray and let pan warm up on medium heat
Cook egg in pan for a few minutes then flip over with spatula to cook until done, seasoning with a light dash of salt and pepper
Take muffin from toaster and place bottom half on a plate with cheese on top, when egg is done place egg on cheese and cook bacon until crisp
When cooked, place bacon onto egg, then tomato slices, wilted spinach, red onion slices and finally your sprouts
