SPINACH BACON FETA WRAP

You may also use English muffins or just plain toast if you’d like and make little egg bacon feta sandwiches, delicious, so easy and so healthy! Please feed to your children with love.

SERVES 4

4 whole grain tortillas

4 eggs + 4 egg whites

8 slices turkey bacon

1 bag of fresh or frozen spinach (preferably fresh, if frozen thaw and squeeze out excess water)

3-4 oz. feta, crumbled

1 large tomato, cut in half and then sliced (option, used sundried tomatoes :)

1 box mushrooms, sliced

1 zucchini, cut in half lengthwise and sliced

3 garlic cloves, minced

Sea salt

Black pepper

Method

Spray cooking pan and sauté garlic on medium heat for 2-3 minutes before adding eggs

In a separate pan, spray and start to cook bacon as directed, usually also on medium heat

Let eggs cook for a minute or two and then add all of the vegetables except for the tomatoes

Add salt and pepper (a nice pinch of each should do) cover with lid, stirring occasionally for 6-8 minutes

Place tortillas open on a plate, one tortilla per plate and using a large spoon scoop eggs and vegetables onto tortilla, add 1-2 slices of bacon, 2-3 tomato slices and about 1 oz. (1/4 c.) of crumbled feta

Roll up and enjoy
