NANCY’S FABULOUS FRENCH TOAST
You will love this recipe, my mom makes a double batch and keeps them in the fridge, just pop in the toaster and it’s like they just came off the stove…
SERVES 4
1/2 loaf sprouted grain bread, about 8-10 slices
2 eggs and 4 egg whites
2 tsp. vanilla
1 tbsp. cinnamon
½ tsp. salt
1 ½ c. low fat milk
Method
Mix ingredients together well with a whisk and pour into a 9x13 baking dish or pan
Heat frying pan to med heat and spray with cooking spray or use 1-2 tsp. ghee or coconut oil
Lay bread in mixture for 30 seconds or so and flip with a spatula to soak for another 20-30 seconds, adding more bread to mixture as you take soaked bread out to fry
Cook French toast for a few minutes on each side, until golden brown
Enjoy with turkey bacon, eggs and/or fruit, or just by themselves!
