MMMMMM— MUFFINS (3 WAYS! AT LEAST?)
So easy, I like to let kids do this one so they can see that cooking delicious and healthy is easy!
SERVES 12
2 c. sprouted whole grain flour
½ c. low fat milk
2 large eggs
1 1/3 c. fresh or frozen fruit (mashed banana, blueberries, diced apple, etc. Are you limiting yourself? Well, stop it!)
1/3 c. + 1 tbsp. raw honey
1/3 c. unsweetened applesauce
2 tsp. baking powder
½ tsp. baking soda
1 tsp. vanilla extract
½ tsp. sea salt
¼ c. nuts, chopped (optional)
1 tsp. cinnamon
Method
Preheat oven to 350
Combine all ingredients together, except fruit and whisk together until smooth
Add fruit (and nuts if using nuts) and stir to combine
Spray a muffin tin with non stick spray, and using a tablespoon, spoon mixture into muffin tin
(I do 2-3 heaping tbsp. per muffin space)
Bake for 20 minutes, remove from oven and let cool in tin for 5 minutes
Remove muffins from tin and place on rack to completely cool
Serve or freeze
