MY TRUE NUTRITION HUEVOS RANCHEROS
A family favorite, Mexican, the Get Skinny! way!
SERVES 4
Salsa (or Pico de Gallo)
4 eggs
1 16 oz. can black beans
1 bunch cilantro, chopped
1 package corn tortillas
1 oz. (1/4 c.) crumbled feta or goat cheese
Garlic seasoning
Sea salt
Black pepper
Method
Heat a pan on medium heat
Start with Salsa:
Use store bought fresh salsa (or see Pico de Gallo recipe in Snacks & Starters section)
1 tsp. olive or grapeseed oil or cooking spray
Fry salsa 3 minutes then remove to bowl
Add a light sprinkle of salt and pepper
Rinse beans and add to the same pan, add a few sprinkles of garlic seasoning and ½ c. water
Cook over low heat until warmed and smash slightly with a fork, remove to another bowl
Cook eggs any style and season with a dash of salt and pepper for each egg
Warm tortillas in the same pan, 30 seconds to 1 minute per side
Place each tortilla on plate, add black beans, then cooked egg, salsa, sprinkle cheese, and cilantro
