WHITE BEAN AND BASIL HUMMUS
A personal favorite
SERVES 8
1 14 oz. can white cannellini beans (drained and rinsed)
¾ c. fresh basil tightly packed or 1/3 c. dried
¼ c. fresh parsley (optional, but recommended)
1 lemon, juiced
3 garlic cloves, minced
1 tbsp. olive oil
1/3 c. tahini
A pinch of sea salt
A pinch of black pepper
Method
Mix all ingredients in a blender, food processor, or by hand, first mashing beans well in a bowl with a fork and then incorporating the rest of the ingredients into the mix
Mix/puree until creamy, occasionally scraping sides
