PROTEIN PACKED GRANOLA

Perfect for a snack by itself, or with yogurt (see parfait). For kids, sometimes I’ll add some dark chocolate chips after granola is baked and cooled… (unless on GS! Program)

SERVES 15

2 ½ c. sprouted oats

1 c. your favorite dried fruit (I use a mix of dried blueberries, cherries and pineapple)

¾ c. of your favorite organic nuts, chopped or sliced (I use a mix of pecans, almonds, and sunflower seeds)

½ c. vegan vanilla protein

¼ c. raw honey

1 tbsp. coconut oil

2 tbsp. cinnamon

1 tsp. vanilla

½ tsp. sea salt

Method

Preheat oven to 300

Warm coconut oil into liquid form (I put it in the oven for a minute or two in a stainless steel measuring cup)

Mix together all ingredients, except dried fruit, until all oats are coated and everything is combined, use a mixer if necessary

Line a rimmed baking sheet with a piece of parchment

Spread mixture onto baking sheet

Bake for 30-35 minutes, stirring mixture around on baking sheet every 5-10 minutes

Let cool, add dried fruit and mix together

Store in airtight container
