SUPERBOWL NACHOS
The healthiest and tastiest nachos you may ever eat…
SERVES 6
1 bag of sprouted tortilla chips, or make your own by cutting up your favorite tortillas into 2” squared pieces and bake in the oven at 325 until crisp
1 c. black beans, drained and rinsed
2 oz./1/2 c. shredded mozzarella
1 large head of iceberg lettuce, shredded
2 large tomatoes, diced
½ ripe avocado, peeled and cut into slices
3 heaping tbsp. of low-fat sour cream or plain Greek yogurt
Green onions, sliced
1 can or jar of black olives, chopped
1 bunch cilantro, chopped
Method
Preheat oven to 325
Pile chips high on a large oven safe dish or pan
Drain and rinse black beans and then pour them over chips, distributing them evenly
Evenly distribute shredded cheese over the mountain of chips and beans
Place into the oven and bake until melted, about 10 minutes
Take dish out from the oven and top with shredded lettuce, diced tomatoes, green onions, sour cream or yogurt, and finally top with black olives and avocado, sprinkle with cilantro
