EGG SALAD & EGG SALAD SANDWICH
A classic
SERVES 4
3 eggs, hard boiled
6 egg whites, hard boiled
3 tbsp. low fat mayonnaise
2 tbsp. plain low fat yogurt
½ tsp. sea salt
½ tsp. black pepper
Paprika if desired
How To Hard-Boil an Egg:
Place eggs in a sauce pan large enough to have them in a single layer, not stacked
Add cold water to cover the eggs by about an inch
Heat on high until water boils, cover the pan and simmer for about 10-12 minutes
Drain and let sit in cold water until you can easily peel
Serve warm or refrigerate
Method
Hard boil all 9 eggs
Peel off egg shells and chop eggs (they do make an egg slicer usually available at most cooking stores)
Add yogurt and mayonnaise, a ½ tsp. of both salt and pepper, and mix together
Finish it off with a dash or two of paprika if desired
For sandwiches:
Lightly toast bread if desired and place a leaf or two of romaine or green leaf lettuce on top of your bottom slice of bread. Spoon in a serving of egg salad, top with another leaf or two of lettuce, and then add the top slice of bread
