TUNA SALAD
Protein and veggie packed, with less than half the fat…
SERVES 4
3 cans skipjack tuna, drained
3 tbsp. light organic mayo or make your own mayonnaise (see recipe)
3 tbsp. non fat Greek yogurt
3 stalks celery, chopped
1 medium onion, chopped
1 tsp. lemon juice
½ tsp. sea salt
½ tsp. black pepper
Make your own healthier mayonnaise:
2 large eggs
1 tbsp. vinegar
½ tsp. salt
½ tsp. dry mustard
¾ c. extra-virgin olive oil
1 tbsp. lemon juice
Method
Mix ingredients together
Enjoy on a salad or on a sandwich on a bed of romaine or green leaf lettuce leaves
