TOASTED CHEESE
Comfort food for the waistline
SERVES 2
4 slices of sprouted grain bread
1 tomato, sliced
½ red onion, sliced
1 c. vegetables, raw or lightly steamed (spinach, broccoli, bell peppers, etc.)
4 slices of mozzarella, Swiss, provolone, or 4 oz. feta
Sea salt
Black pepper
Method
Spray a pan or skillet with non-stick cooking spray and heat to medium heat
Slice cheese into 8 equal smaller slices
Lay bread on skillet and place 1 cheese slice on top (or spread feta) then add tomato slices and onions, top it off with ½ c. of your choice of vegetables and a dash of sea salt and pepper, add 1 more slice of cheese, then top with bread
Let grill for a few minutes or until cheese on the bottom is melted, then flip with care, grill until cheese on other side is melted
Cut in half and serve
