THANKSGIVING IN A SANDWICH

SERVES 4
Large turkey breast with skin (about 12 oz.), lightly season with salt and pepper, bake at 375 for 35 min or until done, remove from heat and let cool for 5 minutes or so, then slice (NOTE: you may also use chicken breast)
1 jar of cranberry sauce or cranberry chutney
4 tsp. light mayo
1 head romaine lettuce
1 large tomato
8 slices turkey bacon, cooked (optional)
4 slices Swiss cheese
1 loaf sprouted sourdough
Method
Preheat oven to 350
Lay bread on a baking sheet, and place 1 slice of cheese on the top slice of bread for each sandwich
Let bread toast in oven and cheese melt for about 5 minutes
Once cheese is lightly melted remove baking sheet and spread 1 tsp. mayo on bottom slice of bread
Add turkey, then cranberry sauce or chutney, then lettuce, 2 slices of turkey bacon, then 1-2 slices of tomato
Press together like Scooby and Shaggy making sandwiches in the cartoon
Cut in half and enjoy
