UNBELIEVABLE BLT (IT’S TRUE…)

Dad’s favorite, so I had to make it healthy

SERVES 4

8 slices sprouted whole grain bread, lightly toasted

1 package turkey bacon, prepare as instructed on package

1 head green leaf lettuce

1 large tomato, sliced

1 avocado, sliced

Organic cheese slices (any white or yellow cheese will do, be creative and try gruyere, Havarti, Swiss…)

Mayonnaise

Sprouts (optional)

Method

Lightly toast bread in the toaster, or if you’d rather, spread a small amount of mayonnaise on the outsides of the bread and lightly toast on a skillet, mayonnaise side down

Add cheese to lightly melt it

To assemble, start with toasted bread, spread with a small amount of mayonnaise

Add lettuce, tomato, bacon, avocado, more lettuce, a slice of cheese (if you didn’t melt it on), and then top with another slice of toasted bread with mayo spread on the inside

Cut in half and plate
