MEATBALLS & MARINARA
Serve with your favorite style of sprouted pasta and a large green salad for an easy, delicious family dinner
SERVES 6
1 ¼ lb. lean ground turkey, chicken or beef
1 c. bread crumbs
4 garlic cloves, minced
1 egg + 1 egg white
1/3 c. diced red onion
1 tsp. sea salt
½ tsp. black pepper
¼ c. chopped parsley
½ tsp. dried basil and
½ tsp. oregano
*Make your own or use organic store bought
2 tbsp. olive oil
2 large onions, diced
6 garlic cloves, minced
6 jars pureed or diced tomatoes (about 18 oz. each)
½ tsp. each of basil and oregano
2 tsp. sea salt
1 tsp. black pepper
MEATBALLS
Method
Preheat oven to 350°F
Spray a baking sheet with non-stick spray
In a large bowl, add your choice of meat, bread crumbs, onion, garlic, parsley, basil, oregano, egg, salt and pepper
Mix well to combine and using your hands, roll into slightly larger than golf ball sized meatballs
Place on baking sheet and bake for 12–15 minutes or until cooked through
MARINARA SAUCE
Method
Bring a large sauce pot to medium high heat and add olive oil, garlic, onions, tomatoes, basil and oregano. Sauté for a few minutes, seasoning with salt and pepper
Add 2 c. water and cook for an hour, stirring frequently, taste and add salt if needed. Cook longer to desired consistency, 2 hours max
Use right away or store and freeze
PASTA
2 c. dry pasta, cook as directed
