CEVICHE
A super easy summertime favorite…
SERVES 6
2 lbs. sea bass, tilapia, or halibut cut into 1” pieces
1 c. lime juice
2 tomatoes, chopped
1 c. onion, chopped
¼ c. cilantro, chopped
½ c. tomato juice
1 jalapeno, finely diced
Salt and pepper to taste
1 avocado, thinly sliced (optional)
6 small sprouted tortillas
Method
Place fish in a bowl, pour lime juice over and mix to combine
Cover with lid or plastic wrap and refrigerate until fish is white throughout, about 15 minutes
Remove from refrigerator and drain lime juice, gently squeezing fish with your hands
Add tomato, onion, jalapeno, cilantro and tomato juice and season with sea salt and pepper to taste
Bake tortillas in the oven at 325 until crisp
Spoon ceviche onto tortilla and serve
