WHITE FISH AND TOMATO SALSA

Seriously simple… Serve with ½ c. brown rice or fresh bread

SERVES 4

4 fillets of white fish, tilapia, cod, turbot, haddock, or halibut

(TIP: vegetarians use tempeh, eggplant or tofu)

1 large jar of your favorite organic tomato salsa

1 tbsp. olive oil

3 c. of any or a mixture of: whole mushrooms, asparagus, peppers, onions

Method

Sauté fish in a large pan on medium heat in oil until lightly browned

Pour salsa over fish and add vegetables

Turn heat to low or simmer, cover with lid and let cook for 35-40 minutes, or until vegetables are tender
