SOUTH OF THE BORDER BURRITOS
Great for involving the whole family, or for parties, make buffet style with ingredients laid out and let family or guests assemble their own! They won’t know how healthy they really are…
SERVES 8
24 oz. 93% ground beef or chicken (you may also use sliced cooked chicken, steak, tempeh or fish)
2 - 15 oz. cans of black or pinto beans (or one of each), or better yet, buy them dried, soak them overnight, rinse and cook in water with a pinch of sea salt
1 - 7 oz. can or jar of Mexican tomato sauce (or tomato sauce if that’s all you can find)
Mozzarella cheese, shredded
1 package large sprouted tortillas
1 large onion, diced
2 large tomatoes, chopped
1 head iceberg lettuce, shredded or 1 bunch of romaine lettuce, chopped
1 tsp. sea salt
½ tsp. black pepper
½ tsp. cumin
¼ tsp. chili powder
¼ tsp. oregano
½ c. fresh cilantro, chopped
Method
Preheat oven to 180
In a large skillet over medium heat, spray with non-stick spray and cook onions for a few minutes, then add ground beef, chicken or your choice of protein until lightly browned
Add spices and salt and pepper
Add tomato sauce and stir
Lower heat to simmer and add 1/8 c. water if it gets too dry
Transfer to large dish and put other ingredients into separate dishes: beans, shredded cheese, shredded lettuce, cilantro and chopped tomatoes
Warm tortillas in pan for about 15-20 seconds on each side (optional) and serve to family for assembly
Serve with refried beans with cheese (optional)
