GRASS FED BEEF OR BISON CHILI
With Spicy Cornbread
SERVES 4
½ tbsp. olive oil
1 lb. ground beef or bison
1 large onion, chopped
4 large carrots, chopped
1 head cauliflower, chopped (about 3 c.)
2 bell peppers, diced
4 garlic cloves, minced
3 tsp. cumin
2 tbsp. chili powder
1 - 28 oz. can/jar crushed tomatoes
1 – 15 oz. can/jar diced tomatoes
1 – 15 oz. can kidney beans, drained and rinsed
1 jalapeno diced
Fresh cilantro, chopped
1 tbsp. apple cider vinegar
Salt and pepper to taste
Method
Add oil to large stew pot. Over medium heat, cook beef/bison for 5 minutes
Add garlic, onions, jalapeno and carrots, cook for 5 minutes
Add ½ c. water
Add bell peppers and cauliflower, cook for 5 minutes
Add cumin and chili powder, vinegar, tomatoes, beans and 1 c. water
Bring to a boil then reduce to simmer, cover and cook stirring occasionally for about 45 minutes
Serve with chopped cilantro and add salt and pepper to taste
