TERIYAKI SALMON OR CHICKEN

Great taste and amazing flavor, enjoy with brown rice and steamed vegetables…

SERVES 4

4 – 4 oz. salmon fillets or chicken breasts/thighs

2 tbsp. sesame oil

1 lemon, juiced

¼ c. soy sauce

2 tbsp. brown sugar

1 tbsp. sesame seeds (optional)

4 green onions, sliced

1 tsp. ground mustard

1 tsp. ginger

½ tsp. garlic powder

Method

Preheat oven to 350

Place salmon or chicken aside in a casserole dish

Mix all other ingredients except salmon and simmer on low for 5–10 minutes

Pour over salmon and cover dish, refrigerate

Marinate salmon for 30 minutes to 2 hours, if time permits

Place salmon or chicken on a baking sheet covered with foil

Bake for 14–18 minutes for salmon, or 20-24 minutes for chicken

Enjoy with 2 c. brown rice divided into 4 servings and steamed vegetables
