THAI CHICKEN SATAY

With Brown Rice and Steamed Broccoli

SERVES 5

Marinade:

1 c. light coconut milk

2 clove minced garlic

2 tsp. curry powder

3 tsp. brown sugar

1 tsp. salt

1 tsp. pepper

4 chicken breasts cut into 1” strips

Satay sauce:

1 c. light coconut milk

1 tbsp. curry powder

1/3 c. creamy peanut or almond butter

¾ c. chicken broth

¼ c. brown sugar

2 tbsp. lime juice

1 tsp. soy sauce (or 1 packet)

Method

Stir together marinade, mix with chicken in a bowl and marinate for 2 hours. Cook on a grill or in a pan on medium high heat for about 4-5 minutes per side

Combine all ingredients (except lime juice and soy sauce) for satay into a saucepan. Simmer over medium high heat for 10-15 minutes until thickened (stir constantly)

Remove from heat and stir in lime juice and soy sauce

Pour over brown rice, steamed broccoli and chicken, enjoy!
