BEANS AND GREENS

SERVES 6

6 c. fresh or frozen spinach (if frozen, thaw and drain excess water)

TIP: you can use any cruciferous vegetable, kale, collard greens, escarole…

1 can cannellini beans

1 onion, chopped

2 c. chicken broth

1 tbsp. olive oil

4 garlic cloves, minced

1 tsp. sea salt

½ tsp. black pepper

Method

Using a large skillet, heat olive oil over medium heat and sauté garlic and onions for a couple minutes

Add beans and greens and stir until lightly cooked

Add broth and simmer for a few minutes

Sprinkle with salt and pepper
