POTATO SALAD
SERVES 6
2 lbs. red or white potatoes, cut and quartered
1/3 c. light mayonnaise
½ c. plain low fat Greek yogurt
2 tbsp. mustard, Dijon or whole grain stoneground is best
1 c. celery, sliced
½ c. red, white or yellow onion, chopped
2 tsp. sea salt
1 tsp. black pepper
1 tsp. sugar
Method
Fill a large pot about halfway full of water and add a few dashes of sea salt
Bring water to a boil and add potatoes
Cook for about 12-15 minutes until tender but still firm, drain and allow to cool
In a large bowl combine all ingredients except potatoes, celery and onion, saving them to add last
Add potatoes, celery and onions and toss gently
Served chilled or at room temperature
