SWEET POTATO CASSEROLE
SERVES 6
2 large sweet potatoes, cubed
2 eggs, beaten
1/4 c. brown sugar
½ c. 2% Milk
2 tbsp. butter, softened
½ tsp. salt
½ tsp. vanilla
1/3 c. pecans, chopped
Method
Preheat oven to 325
Place sweet potatoes in a medium pan and cover with water, cook on medium high heat until tender, drain and mash (or you can bake them in the oven at 350 until soft, about 35–45 minutes, cut in half and scoop out)
In a large bowl mix together all ingredients, saving pecans until the rest is mixed until smooth
Spoon contents into a 9x13” baking dish
Bake for 25-30 minutes
