GINGERSNAPS

MAKES 12 COOKIES

1 c. sprouted flour

2 eggs + 1 egg white

1/3 c. sugar

1 tsp. baking soda

1 ½ tsp. ground ginger

1 tsp. cinnamon

½ tsp. vanilla

¼ tsp. salt

Method

Preheat oven to 350

Mix all ingredients together in a large bowl, use a mixer if you have one, or a large spoon

Using a tablespoon, spoon out about 1 ½ tbsp. of dough per cookie on a baking sheet coated with non-stick spray

Bake for 10-12 minutes, remove from cookie sheet and cool on a rack for 5-10 minutes
