This rich olive paste is a versatile ingredient for many Flat Belly Diet recipes and is incredibly easy to make at home.
2 cups Niçoise olives, pitted
2 teaspoons capers, rinsed and drained
3 cloves garlic
2 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice
¼ teaspoon ground black pepper
1. In a food processor, combine the olives, capers, and garlic. Pulse until coarsely chopped. Combine the oil and lemon juice in a measuring cup. With the machine running, add the oil mixture through the feed tube to blend into a rough paste. Add the pepper and pulse to combine.
2. Transfer to an airtight container. Refrigerate for up to 2 weeks.
