Black Olive Tapenade

This rich olive paste is a versatile ingredient for many Flat Belly Diet recipes and is incredibly easy to make at home.

2 cups Niçoise olives, pitted

2 teaspoons capers, rinsed and drained

3 cloves garlic

2 tablespoons olive oil

1 tablespoon freshly squeezed lemon juice

¼ teaspoon ground black pepper

1. In a food processor, combine the olives, capers, and garlic. Pulse until coarsely chopped. Combine the oil and lemon juice in a measuring cup. With the machine running, add the oil mixture through the feed tube to blend into a rough paste. Add the pepper and pulse to combine.

2. Transfer to an airtight container. Refrigerate for up to 2 weeks.

Nutrition per serving: 60 calories, 0 g protein, 2 g carbohydrates, 5 g total fat, 0.5 g saturated fat, 1g fiber, 270 mg sodium

Serve spread on 2 slices gluten-free bread (100) topped with 2 eggs scrambled in a nonstick pan coated with cooking spray (156), and 1 slice reduced-fat provolone (77).
