For breakfast on the go, assemble the parfaits in portable containers the night before. Sprinkle with the almonds right before eating.
1 cup 0% plain Greek yogurt
1 tablespoon maple syrup
1 teaspoon grated peeled fresh ginger
1 cup fresh blackberries
1 navel orange, peeled, sectioned, and cut into 1″ pieces
¼ cup sliced almonds, toasted
1. In a medium bowl, combine the yogurt, maple syrup, and ginger until blended.
2. Place one-fourth of the blackberries and the orange in the bottoms of 2 parfait glasses. Dollop each with one-fourth of the yogurt mixture. Top with another one-fourth of the blackberries and the orange, followed by the remaining yogurt mixture. Sprinkle each serving with 2 tablespoons of the almonds.
