Smoky Avocado BLT

Chipotles in adobo sauce are smoked jalapeños in a spicy tomato sauce. They provide just the right amount of heat to this tasty sandwich. Store unused chipotle chiles in adobo sauce in an airtight container in the refrigerator for up to 1 month or in the freezer for up to 3 months.

¼ Hass avocado, peeled, pitted, and cubed

1 chipotle chile pepper in adobo sauce, chopped

1 teaspoon lime juice

1 slice gluten-free deli-style sourdough sandwich bread, toasted

2 leaves Boston lettuce

2 slices tomato

3 slices low-sodium crisp-cooked bacon

In a small bowl, mash the avocado, chile pepper, and lime juice until blended. Spread on the toast. Top with the lettuce, tomato, and bacon. Cut in half to serve.
