2 tablespoons lime juice
1 tablespoon olive oil
¼ teaspoon salt
1 small seedless watermelon (about 4 pounds), cut into 1½″ chunks
1 Hass avocado, peeled, pitted, and chopped
½ small red onion, thinly sliced
3 tablespoons chopped fresh mint
In a large bowl, whisk together the lime juice, oil, and salt. Add the watermelon, avocado, onion, and mint, and toss gently to mix.
