These individual meat loaves come together in considerably less time because they cook faster on the stove top than in the oven.
½ cup toasted walnuts
½ onion, coarsely chopped
1 package (8 ounces) sliced cremini mushrooms, divided
1 pound ground turkey
¾ cup gluten-free rolled oats
2 tablespoons ketchup
1 egg, lightly beaten
½ teaspoon dried thyme
½ teaspoon salt
1 teaspoon olive oil
¼ cup water
¼ cup 0% plain Greek yogurt
1. In a food processor, combine the walnuts, onion, and half of the mushrooms. Pulse five or six times, or until finely chopped. Transfer to a large bowl.
2. Add the turkey, oats, ketchup, egg, thyme, and salt. Gently mix to combine. Form into four 5″ oblong loaves, about 1½″ thick.
3. In a large nonstick skillet over medium-high heat, warm the oil. Add the loaves and cook for 4 minutes on each side, or until browned. Top with the remaining mushrooms and pour the water into the center of the skillet. Reduce the heat to low, cover, and cook for 15 minutes, or until a thermometer inserted in the center of a loaf registers 165°F. Transfer the loaves to a plate.
4. Stir the yogurt into the mushroom mixture in the skillet and remove from the heat. Serve the loaves with the sauce.
