Grilled Steak with Blue Cheese and Walnuts

Be sure to choose brands of blue cheese that are gluten free, like Maytag Blue and BelGioioso.

2 tablespoons red wine vinegar

1 tablespoon olive oil

1 tablespoon finely chopped shallot

¾ teaspoon salt, divided

¼ cup crumbled blue cheese

1 pound sirloin steak, trimmed of all visible fat

¼ teaspoon ground black pepper

½ cup toasted walnuts, chopped

1. In a small bowl, whisk together the vinegar, oil, shallot, and ¼ teaspoon of the salt until blended. Stir in the blue cheese and set aside.

2. Coat a grill rack or nonstick grill pan with cooking spray and preheat it to medium. Sprinkle the steak with the pepper and the remaining ½ teaspoon salt. Cook for 8 minutes, turning once, or until a thermometer inserted in the center registers 145°F for medium-rare. Let stand for 5 minutes before thinly slicing across the grain. Serve with the sauce and sprinkle with the walnuts.
