3 medium zucchini
2 tablespoons extra-virgin olive oil
¼ cup toasted pine nuts
3 tablespoons chopped fresh dill
2 tablespoons lemon juice
¼ teaspoon salt
1. With a vegetable peeler, shave the zucchini into thin lengthwise slices. Transfer to a large bowl.
2. Add the oil, pine nuts, dill, lemon juice, and salt. Toss gently to combine.
