Serve these crunchy rings with your favorite mild or medium salsa.
1 large sweet onion, cut crosswise into ½″-thick rounds
1⁄3 cup gluten-free all-purpose flour
¼ teaspoon xanthan gum
½ cup low-fat buttermilk
1 egg white
1 cup gluten-free cornflakes, finely crushed
1 cup almond meal
½ teaspoon salt
1. Preheat the oven to 450°F. Coat 2 large baking sheets with cooking spray.
2. Separate the onion rounds into 16 rings. Place the flour and xanthan gum in a large resealable food storage bag. Add the onion rings, a few at a time. Seal the bag and shake until evenly coated.
3. In a medium bowl, whisk together the buttermilk and egg white until blended. Combine the crushed cornflakes, almond meal, and salt on a sheet of waxed paper. Dip the rings, one at a time, into the buttermilk mixture, then into the almond meal mixture. Transfer the rings to the baking sheets and lightly coat them with cooking spray.
4. Bake for 15 to 18 minutes, or until the onion rings are golden and crisp.
